Recipe of the Month - Tabbouleh SaladThe summer is here and vegetables are in season! Try this Tabbouleh Salad with Chicken and Red Pepper for a quick, easy, and flavorful salad to keep you cool. Fresh parsley, mint, and lemon provide a refreshing boost of flavor alongside colorful, crisp vegetables. The chicken and bulgur make this tabbouleh a main meal.

This dish is easy to change up to make a whole different meal. Try using brown rice instead of bulgur or try turkey, tuna fish, hummus, or beans instead of chicken. This salad stores well in the refrigerator, so make it ahead of time and you'll have a grab-n-go lunch already prepared for the week.
